You're on the right track though in overbuilding it. However, even 4GB of ram may not be enough for you especially over time. 64-bit Vista uses up about 1.5GB or more just idle, and if you're running some hefty programs then you're only going to have 2.5 available for those programs. Unfortunately I don't think you can get more than 4GB of memory in many notebooks.
You should also probably go with a core 2 quad if you can instead of the core 2 duo. The core 2 duo is a great processor but at the moment it really only excels in games and only slightly.
Also your 640GB of hard drive space is, I think, a striped pair of 320GB drives, which means if one drive goes bad you lose everything on both drives (but the pairing does increase speed a little).
You will also want to get the longest warranty you can get, or at least plan on extending whatever warranty you do get just before it runs out.
